It’s that time.

After 18 months the elevage has come to an end, the blending of the 07s has been fine tuned, and the wine is coming out of the barriques and will be blended in Inox tanks.

The blends for each wine will be left to sit for a duration of two months or so until bottling begins.

We’re putting together a video of the work in the vineyard and the chai in April which is taking a little time.

In the meantime…

After the wine is pumped out of the barriques, a ‘pastille’ (a kind of pill) of burning sulphur is lowered into the barrel as part of the process of  maintaining and cleaning it.

As you can imagine, it’s rather overpowering to inhale and smell. Thus the cough you hear…
